Subject: Kielbasa and Pierogies
Preparation:
Boil 1 package pierogies (12 Pierogies)
* Mrs. T’s Potato & Cheddar are a good brand
Cut 2 small yellow squash into discs, about 1/3 of an inch in width. (2 cups)
Cut 2 small zucchini squash into discs, about 1/3 of an inch in width. (2 cups)
Preheat a skillet.
Cut 1 Turkey Kielbasa into discs, about ½ of an inch in width. (18 ounces)
· Jennie-O Turkey Kielbasa (95% Fat Free) Lean is a good brand
Put cut Kielbasa in skillet with 1 cup water. Cook for 5 minutes.
You may need to add more water depending on the size of your pan.
Put 1 to 2 tbsp of minced garlic in to the skillet.
Put your zucchini and yellow squash in to the skillet.
Water should be boiling by now, cover skillet.
Cook for 6-8 minutes, uncover, pepper to taste.
Insert your boiled Pierogies, and cook uncovered for another 4 or 5 minutes.
Place on to plate, sprinkle 1-2 tsp of parmesan cheese over the top. Serve hot.
This serves 4 people.
Calories - 400 (You can make smaller portions – this is A LOT of food)
1 cup veggies, 3 pierogies, 4.5 ounces of meat.
Fat – 8 grams
Carb – 45 grams
Prot – 30 grams
I usually cook for myself, so I cut everything by 4, it still works very well.
